Functional yogurts enriched with plant-based bioactive compounds have emerged as promising dietary strategies to enhance human health. Objective: This study investigated the fortification of yogurt with Rhamnus alaternus fruit powder and its impact on quality characteristics, sensory attributes, and antioxidant activity. Methods: The current study involved preparing a powder from the fruit of the R. alternus plant, which underwent chemical and antioxidant analysis. Fresh buffalo milk was used to prepare yogurt, and products were fortified with the R. alternus powder. Water pollution as a result of contamination with dye-contaminating effluents is a severe issue for water reservoirs, which instigated the study of biodegradation of Reactive Red 195 and Reactive Blue dyes by E. coli and Bacillus sp. The effects of occupation time, solution pH, initial dyes concentrations, biomass loading, and temperature were investigated via batch-system experiments by using the Design of Experiment (DOE) for 2 levels and 5 factors response surface methodology (RSM).
