The aim of this investigation was to prepare pies stuffed with ground veal as different level of Textured Soy Protein (TSP) that wetted, minced and replaced at (0, 15, 20, 25 and 30%). The effect of partial substitution for veal with TSP quality, sensory characteristics such as color and homogenizing of the stuffing, taste, flavor, juiciness and overall acceptability was evaluated by taste panel. The obtained results showed that product prepared with replaced 15 and 20% were acceptable by panel taste without significant differences compared to control. The rice cooked with whey in a ratio 1:10 w/w, then the product was fermented by lactic acid bacteria (LAB) starters that comprise each Lb.acidophilus (Lb.a),Lb.casie(Lb.c) and their mixes at ratios: 1a:1c ;2a:1c ; 1a;2c . This study focuses on the basics and the details of production of maize in Wasit province, in order to detect the spatial variation of the cultivation, production and the reality of their geographical distribution. The study has shown that maize is an important field crops grown in this province. The research found many conclusions, including the following: (1) The top area had been planted with maize in Wasit province, was (102888) acres with a total standard degree (Sd) scored at (1.3), in 2004; while the lowest planted area, namely, (43196) acres was planted in 2010 with a standard degree of (-1.6).
