Effect of Natural Phytase, Fermentation, and Baking Processes on Phytate Degradation in Wheat Bread Manufactured from Local Mills Flour

     The present study aims to investigate the effect of wheat natural phytase, fermentation and baking processes in the destruction of phytic acid during the process of making wheat bread for some Iraqi mills. The concentration of phytic acid was (850.32, 802.14, 531.84 mg / 100g) for the flour of AL-Brairie, AL-Nesr and AL-Al-Doura mills respectively. At the end of the fermentation processes, the decrease in the concentration of phytic acid in the samples produced from the flour obtained from the three mills was (47.06, 26.98, 40.00%) respectively, while inorganic phosphorus concentration in all treatments increased by 32.4, 42.37 and 36.21 %, respectively. It was found that the activity of wheat natural phytase enzyme varies according to the type of mill and the enzyme has been destroyed after the baking process for all treatments. It is clear that, with the effect of wheat natural phytase enzyme and fermentation and baking processes, the concentration of phytic acid may be reduced when preparing wheat bread for some mills by (26-47%).

Production of Tannase from Aspergillus niger under solid state fermentation

Thirteen A.niger isolates were obtained from soil and food samples and screened on tannic acid agar for their ability to produce tannase. There isolates revealed large tannic acid hydrolysis zones, these isolates were cultured in liquid and solid substrate fermentation media to examine their production of tannase quantitatively .Solid substrate medium was more efficient than liquid medium ,and A.niger Ass19 gave the highest tannase productivity. Effect of Refractive Index on Photon Natural Mass and Wavelength

In this article it is proved experimentally that the photon is a particle that has mass and constant wavelength by explaining the effect of refractive index on the wavelength and the natural mass of photon. It is very difficult to measure the mass of photon, a simple and easy process was proposed in this paper to calculate the mass length of photon in vacuum (Y) and in medium (Y*), by measuring the length of laser beam in air (Lair) and in medium (Lmed). A new method was postulated to calculate refractive index by using these relations (n = Y*/Y), and (n = Lmed / Lair) which supposed a new theory of light.

Effect of soaking with bread yeast extract on sorghum seed germination under salt stress conditions

Salt stress negatively affects germination and seedling growth. Sorghum cultivars (Bohuth70, Inqath and Rabeh), seed soaking in dry yeast extract (3, 6 and 9 g l-1) in addition to dry seeds and electrical conductivity (4, 10 and 16 dS m-1) were studied. Traits of germination ratio at first and final counts, lengths of radicle and plumule, seedling dry weight and seedling vigour index were studied. This study was carried out to determine the effect of extras of orange peel of (Citrus sinensis) in concentrations (1,5, 10) % as well as stomachic effect for the powder of the plant with doses of 5,10 , 15/gm on the biological activities of the adults of Tribolim confusum . The effect of powder from the adults has been evaluated using different concentrations of the orange peel. Estimation and Simulation in Batch Fermentation of Baker's Yeast Production

Baker's Yeast is an important additive among the substances, which improves bred quality, thus, a consideration has been made to study the conditions and parameters that affecting the production of the yeast in a batch fermenter experimentally and theoretically. Experimental runs were implemented in a 12-liter pilot-scale fermenter to predict the rate of growth and other parameters such as amount of additive consumed and the amount of heat generated. The process is modeled and performed using a computer programming prepped for this purpose, the model gave a good agreement comparing to the experimental work specially in the log phase.
