The structural properties of mesoporous were fully characterized by X-ray diffraction (XRD), N₂ adsorption /desorption and Fourier-transform infrared (FTIR). To investigate their enzymatic and biological activities, 32 yeasts were isolated from 15 date vinegar samples.
