This qualitative study was conducted on eight types of commercial baking yeast which available in local markets to estimate their fermentation activity as affecting the Bread industry and the impact of the salt added to DoughLeavening, The results showed a great variation in the fermentation capacity of yeast samples (their role in swelling the dough), most notably the sample value Y3 and least sample Y7 and reached 80% and 20% respectively, and the value of Leavening by using the two types of yeast with addition of three levels of salt (0 , 1 and 2%) have 20.0 , 19.7 and 15.7 of the sample Y3, compared with 10.5 , 10.3 and 8.8 of the sample Y7 for each of the levels of salt respectively, reflecting the inverse relationship between high salt percentage added, as the results sensory evaluation indicators of quality of laboratory bread by using the two types of yeast and there were significant differences at the 0.05 level by 12.6 among them.

The objective of this study was to isolate and identify the asparaginase-producing bacteria, then purify and characterize the enzyme in order to investigate their properties in the future. Fifteen local bacterial isolates were isolated from various sites in the city of Baghdad, identified by conventional morphological and biochemical procedures, and confirmed using vitek 2 methods, and submitted to primary screening processes for asparaginase production. This research studyies the effect of MgO and ZrO2 as additives in sintering Al2O3 . The experimental results are modeled using ( L2 _ regression) technique , sintered density and grain size rate measurments were accounted by utilizing experimental results of undoped , MgO doped and ZrO2 doped alumina impregrated with spherical large pores in final stage of sintering . The effect of each additive is inhibitian of the grain growth and increasing the densification rate which enhances the kinietics of densification and the removal of large and small pores.
