Fifty-Four paddy samples, 45 soil samples, and nine irrigation water samples of some paddy fields at Alfurat Alawsat Area, Iraq were collected to investigate the microbial quality including total count bacteria (TCB), molds and yeast, total coliform (TC), and E. coli bacteria. Paddy samples were processed at the laboratory level to produce rice at 32 and 36 whiteness, and the microbial quality of the produced rice was conducted too. The results showed that all irrigation water samples were overpassed the FDA limit for E. coli. All paddy samples were exceeded the good limit of TCB, but no sample exceeded the acceptable limit. This study aimed to isolate and identifye the growth of microorganisms and
their effect on pickled cucumber and cabbage, the study also investigated the effect of
garlic (in the form of segments, chopped or crushed) on the mentioned pickled –food
features . Furthermore, a sense based comparison is made between vinegar-preserved
samples and vinegar-garlic preserved ones.

The Tigris River in Iraq is of highly meandering in several of its parts. So, the largest meandering inside Baghdad City, is in Al-Jadriyah. During its course, the Tigris Riverbanks are facing erosion frequently due to alteration in the geomorphological and hydrological characteristics affecting the river channel. The entire length of Tigris River from the northern entrance of Baghdad to the convergence with Diyala River at southern of Baghdad is about 49 km length.
