Leuconostoc bacteria was isolated from local pickled cabbage (Brassica oleracea capitata) and identified as Leuconostoc mesenteroides by morphology,biochemical and physiological. The inhibitory effect of prepared polymer on the activity of human serum Cholinesrerase has been studied in vitro.
