New hydrazide compounds (A2) and (A9) were prepared from their corresponding esters (A1, A8) .These esters were also prepared from their precursors 5-ethoxy carbonyl-(4methoxyphenyl)-6-methyl-1,2,3,4-tetrahydropyrimidine-2-thione (A1) via multicomponent reaction type and from hippuric acid respectively. The hydrazide compounds were then allowed to react with some aldehydes forming the corresponding hydrazones (A3-7) and (A1014). Many strains of lactic bacteria produce antimicrobial peptides of bacteriocins that are antibiotics used against pathogenic strains. The present work aimed to use a banana peels medium in the fermentation process to replace the commercial MRS medium for decreasing the cost of bacteriocins LAB production. Based on the result, banana peel was a cost-effective and viable alternative carbon source for the production and development of bacteriocin-producing Lactobacilli. The growth of lactobacilli in commercial MRS medium and Banana Peel medium showed no differences, therefore banana peel waste can be used to produce Lactobacilli bacteriocins. Lactobacillus strains grew exceptionally well at 37 C and pH 6.0.

       Due to their high nutritional value, richness in carbohydrates and good source of protein, legumes are considered essential for human diet. Legumes flours were used as fermentable material for lactic acid production. Hence, previously isolated lactobacilli strains were used in this study. The strains showed strong microbial growth and their survival in glucose-containing MRS medium and were described using a modified Gompertz equation. Lactobacilli exhibited the shortest latency phase in MRS-glucose medium. While the highest lactic acid produced was 15.40g/l by Lpb. pentosus U1 isolate after 48hours.
