Heating andcongealing method was used to prepare FBP jelly using three different polymers (pectin,sodium carboxymethyl cellulose, and hydroxypropyl methylcellulose). The studies are based on particle image velocimetry (PIV) method, coupled with a high resolution imaging camera.
