Protease enzyme production was studied and optimized as a first step to collect information about solid state fermenter) to produce protease enzyme. A local isolated Aspergillus niger was used for this study with constant spores feeding in every experiment at (105/g). Experiments carried out in conical flasks with (250 ml) containing (10 g) of wheat straw as a substrate with different conditions included temperature, pH, hydration ratio, and fermentation time, the results comprised by measuring protease activity (u). The results showed that the best activity can be obtained at (T = 32°C, t= 100 hrs, pH= 2.5 and hydration ratio is 1:3). On the other hand the results is courage to proceed to design a solid state protease fermenter from wheat straw.
This investigation was carried out to examine the effect of replacing partial of flour by dried Lentils (Lens culinaris) to white flour in different percentages on the chemical, sensory and storage properties of the Laboratory bread. The results revealed that replacing 0% than wheat flour by lentil powder (1) control was high significan than the replacing 25 and 35% than wheat flour by lentil powder ( 4 and 5) in flavor and chewiness . The results of sensory evaluation showed that replacing 4 were high significan different than that of replacing 1 in external layer colour. The identification of salinity-tolerance genes is a critical aspect of the new molecular technology. In this work cDNA-RAPD is used for the identification of genes expressed in salt tolerant but not in salt sensitive wheat. Two cultivars wheat, salt tolerance (Dijla) and sensitive (Tamooz2) were used for the preparation of RNA and cDNA synthesis. Eight primers were used for random amplification of cDNA constructed from RNA and three primers were differentially expressed in salt tolerant cultivars.
