Leuconostoc bacteria was isolated from local pickled cabbage (Brassica oleracea capitata) and identified as Leuconostoc mesenteroides by morphology,biochemical and physiological. This study includes applying chemical tests on cow, sheep and chicken bones including both hallow and flat.
