Studying the Effectiveness of Bromelain Enzyme Extracted from Pineapple Against Anti-Inflammatory and Anti-Cancer Cells

Abstract<p>The experiment was carried out in the laboratories of the College of Agricultural Engineering Sciences, University of Baghdad, Bromelain enzyme was extracted from pineapple fruit crown and pineapple peel. An extraction solution was used with different mixing ratios from 1:1 to 5:1. The mixing ratio of 2:1 was the best extraction ratio, as it reached the highest enzymatic activity among the other mixing ratios, which was 33 units. The enzymatic activity of the crown extract was higher than the enzymatic activity of the peel extract, reaching 9.8 units/ml and 1.1 units/ml, respectively, the enzyme was precipitated using ammonium sulfate at a concentration of 30 % - 90 %. This concentration 60% is (total activity 77 units) The enzyme’s anti- inflammatory activity was tested. The enzyme’s anti-cancer activity was tested after selecting two single breast tissue-derived human cancer cell lines, MDA-MD 231 and MCF-7</p>

THE USE OF BROMELAIN ENZYME EXTRACTED FROM PINEAPPLE CROWN AS ANTI-BROWNING IN APPLE JUICE AND ANTI-BACTERIAL

Lyophilized bromelain enzyme was obtained from the Department of Food Sciences, College of Agricultural Engineering Sciences, University of Baghdad. Some properties of the enzyme were determined, the optimum temperature and pH for activity and stability, as it used a range of graduated temperatures from 25 °C to 85 °C, as well as a range of pH degrees from 4 to 9. The results showed that the best pH for activity was 7, as it reached the enzymatic activity was 42.3 units/ml, and the best pH range for stability was 7-5. The best temperature for the activity was 45°C, as the enzymatic activity reached 59.3 units/ml, and the enzyme retained its full activity after being incubated at a temperature of 25 - 45 °C. Red Ginger's Anti-Anxiety Effect on BALB/c Strain Mice (Mus musculus) Pro-Inflammatory and Anti-Inflammatory Measurements as Anxiety Model

There is a correlation between the occurrence of anxiety and the production of inflammatory mediators, and red ginger rhizome is a well-known herbal product with a high content of phenolic and flavonoid compounds that can be used as anti-inflammatories and antioxidants. The aim of study to evaluate the effect of red ginger as antianxiety in mice (Mus musculus) BALB/c strain by measuring levels of TNF-α, IL-6 and IL-10.  Anxiety model mice were carried out by giving treatment with the Forced Swimming Test (FST) for 7 days then assessed by carrying out the Elevated Plus Maze for Mice (EPM) test for one day. After the treatment, the anxiety mice model was made, followed by administration of red ginger ethanol extract therapy for 14 days.
