Production of Lactic Acid by lactobacilli using Legume Flours

       Due to their high nutritional value, richness in carbohydrates and good source of protein, legumes are considered essential for human diet. Legumes flours were used as fermentable material for lactic acid production. Hence, previously isolated lactobacilli strains were used in this study. The strains showed strong microbial growth and their survival in glucose-containing MRS medium and were described using a modified Gompertz equation. Lactobacilli exhibited the shortest latency phase in MRS-glucose medium. While the highest lactic acid produced was 15.40g/l by Lpb. pentosus U1 isolate after 48hours. Furthermore, these strains were evaluated in flours samples for acidification capacity. The results showed a decrease in pH values after 12hours of fermentation, indicating the fastest acidification with maximum lactic acid generation of 31.66, 25.33, 31.00 and 31.66g/l for black gram flour by Lpb. plantarum M1, Lpb. pentosus U1, Lpb. plantarum VIP1 and Lev. brevis TIP1 isolates. Black gram flour was considered the best among the used substrates for enhancing lactic acid production. Overall, this study can be termed as a preliminary step for fermentation using the desired organism in preparing legume-based food at the industrial level and benefiting consumers.

Preparation of Media for Growth and Isolation of Lactic Acid Bacteria by Using the Starch-Industry by- Products

By- products of corn starch industry were used to prepare media for propagation the lactic acid bacteria as a natural auxotroph. The by- products used were the corn steep water (S) and gluten extract (G) after a proper treatment to get them ready for media preparation. The results showed that it was possible to replace the peptone and meat extract by gluten extract in MRS medium. The growth was approximately similar to that obtained in standard MRS media. Polymerization of Acrylamide N-methylene Lactic and Glycolic Acid

Citric Acid Production Using Wheat Bran by <i>Aspergillus niger</i>

This study aimed to obtain a local isolation of Aspergillus niger and then studied its ability to produce citric acid from raw materials available locally using solid state fermentation. Six local isolates were collected from different sources including some samples of the damaged fruits such as grapefruit, oranges and sindi. Kinetic Study of the Leaching of Iraqi Akashat Phosphate Ore Using Lactic Acid

Leaching was studied using lactic acid for the separation of calcareous materials (mainly calcite). In this study 100 samples were collected from infected children with acute and chronic tonsillitis who attended to Al-Yarmook Teaching Hospital (ENT consultation clinic) from 5/12/2013 to 1/3/2014. The result of laboratory culture was positive in 67 samples. Depending on their cultural, morphological and biochemical characterization of bacterial isolate of them were identified as (37.31%) belonged to Streptococcus pyogenes and the diagnosis is confirmed by the use of Remel Rapid STR System, (34.32%) belonged to S.parasanguinis, (11.94%) S.mitis, (11.94%) S.oralis and (4.47%) S.thoraltensis .
