Comparative Study of Grains, Flours and Baking Quality of Wheat Cultivar (Uruq) with Other Wheat Cultivars (Triticumaestivum L.) in Iraq

The grain hardness, wet and dry gluten contents, protein and ash contents are determined in grains from different cultivars of wheat which are important in food products, either which are present in raw materials or in final products. Wheat is also a very important food raw material, and flour as the final product of milling. The importance of knowing the physical and chemical properties of wheat and flour is due to the determination of quality and kind of flour which is produced after the milling process. In this work, some physical and chemical properties of different wheat cultivars are determined and the comparisons of these characteristics are performed in both wheat and flour. Uruq Wheat sample (W5) has the highest results when compared with other wheat cultivar reaching 82 kg/ hectoliter, 9.2 % and 41 gm, 0.81, 8.8, 5.5, 30 %, 67 %, 73.6 %, 518, 858 specific weight, moister, 1000 grain Weight (gm), Ash %, Moister %, color test, moist. gluten %, Gluten index %, Absorption %, Falling No. and gelatination respectivelywith specifications grain white, transparent color, uneven gully depth and full cross-section of a glasses grain. The lowest results are by contrast with Forat cultivar in sample W2. Characteristics that are observed in this work are affect of the contents of with to moister, ash, protein, gluten and water absorption values there are useful for milling industry of different wheat cultivars.

Effect of Biofertilizer in Organic and Conventional Systems on Growth, Yield and Baking Quality of Hard Red Winter Wheat

A two-year study (harvest years 2019 and 2020) was conducted to investigate the effect of a commercially available biofertilizer, in combination with variable nitrogen (N) rate, on bread baking quality and agronomic traits in hard winter wheat grown in conventional (CONV) and organic (ORG) farming systems in Kentucky, USA. Laboratory Study on the Susceptibility of Locally Bread Wheat Cultivars to Infestation by Green Bug

Five bread wheat cultivars was selected namely, IPA99, Tamouz 2, Rasheed, Abu-ghraib And Iraq, were selected for susceptibility to green bug, Schizaphis graminum R.(Aphididae: Homoptera) infestation. Experiments done in under laboratory temperature 20±2C˚, humidity 65±5 % at 12h light. Results have indicated that IPA99 was highly preferred by in S. graminum and no significant of differences with Rasheed and Abu-ghraib, while Iraq and Tamouz2 came second. In this research, the influence of the fermentation treatments and baking in Iraqi’s flour type (Ibaa 99, Al-rashed, Tamus, Abu-grabe) and Turkish flour type (Muaamel) on phytic acid was investigated. In whole wheat flour, the phytic acid was (1500, 1290, 1450, 1230, 1440 ( mg/ 100 g flour respectively, and the inorganic phosphorous was (29.18, 25.15, 23.89, 20.85, 22.83) mg/100 g flour respectively. The dough prepared from flour with a higher phytic acid content also contained higher amount of phytic acid. During fermentation, degradation of phytic acid occurred.      The present study aims to investigate the effect of wheat natural phytase, fermentation and baking processes in the destruction of phytic acid during the process of making wheat bread for some Iraqi mills. The concentration of phytic acid was (850.32, 802.14, 531.84 mg / 100g) for the flour of AL-Brairie, AL-Nesr and AL-Al-Doura mills respectively.
